Black bean spaghetti (or any other GF spaghetti of your choice)
2 cups broccoli
1 cup red capsicum
1 cup mushrooms
1/2 cup onions
1 cup snow peas
1/4 cup pine nuts
2 tbsp brown sugar or maple syrup
2 tbsp soy sauce
1 tbsp vinegar
1 1/2 tsp sesame oil
1/2 cup soaked cashew nuts
Cook GF spaghetti of your choice as per instructions on the package.
Prepare the sauce by combining all the ingredients in a food processor and blend together until it’s all smooth and silky. Pour the sauce into the cooked spaghetti.
Stir-fry vegetables on a high heat for few minutes. While they are hot but still crunchy, add them to the spaghetti mixture.
Sprinkle with pine nuts on the top and serve.
