Sweet Potato Pasta with Fresh Carrots



2 sweet potatoes, spiralized

2 carrots, spiralized

1 small box of cherry tomatoes

2 cups spinach, packed

Basil leaves, optional

2 Tbsp olive oil



1 cup cashew nuts

1 Tbsp olive oil

1 clove of garlic

Salt/pepper/cayenne pepper

1/2 cup water





Make the pasta sauce by blending all the sauce ingredients together in a high-speed food processor until silky smooth.


Spiralize sweet potatoes and brown them with a little bit of olive oil in a saucepan. Add spinach with tomatoes and sauté gently on a medium heat. Add creamy sauce and toss the all together. At the end add crunchy spizalized carrots for texture and remove from the heat. Sweet potato pasta with fresh carrots is ready to be served. Enjoy
