The Meat Swadl has been a game-changing piece of gear that I didn’t know that I even needed. This slice of genius has become an almost daily companion, and judging by its ongoing track record, it’s also one of the secret weapons behind a few Grand Champion wins in the barbecue competition scene!

The Meat Swadl is basically a well insulated sleeping bag to keep meat nice and toasty whilst resting.

In my opinion, the old chillibin-and-towel setup for resting meat is mostly now obsolete. The Meat Swadl handles the process with effortless style, ensuring every brisket or pork butt gets the rest it deserves, holds temperatures for longer and in a more stable environment. Think of it as a snugly well insulated sleeping bag for meat….but wait there is more!

The Meat Swadl is perfectly sized for most standard oven trays but also cinches up to fit competition hand-in-boxes, guaranteeing your barbecue is at “judge-perfect-temp” when it hits the table!

But don’t be fooled thou, this is a multi-talented bit of kit. On the golf course, on the boat, or at the beach, this thermal powerhouse also keeps refreshments cold for hours. It’s a bit of a surreal happy thought, that one minute it is gently swaddling a perfectly smoked brisket, and the next, keeping cold ones nice and frosty. I suggest this is an excellent case for owning multiple Swadles (or is that Swadi?) – The Meat Swadl and The Drinks Swadl!

It also takes the stress out of pot-luck dinners for instance. From your barbecue to their table, this thing makes sure your mac ‘n’ cheese, pizza, smoked wings or the family sized smoked brisket ‘n’ cheese pie arrives perfectly hot and ready to be devoured.

Crafted from a durable, waterproof polyester shell with a polar fleece lining and silk-cotton stuffing, it’s a breeze to clean. The zippers and velcro keeping it all together are staunch-as, so as to keep heat leakages to a minimum.

My only complaint – and it’s more for the “wish list”, is that, for it to be just a smidge larger to fit the gastronorm food pans that we use commercially daily at The Barbecue Hut – Mangawhai.

Ample in dimensions for most home and competition applications, but could be just a little more roomy for commercial kitchen usage.

All in all, this is a very cool bit of kit. I didn’t know I needed it, but now I can’t imagine life without it. Also the Meat Swadl is possibly the best pressie for the barbecue enthusiast that already has everything.

Now let’s put The Meat Swadl through it’s paces…..

A smoked brisket is now probing like butter, so its time to wrap and rest in The Meat Swadl. Let’s see how this plays out over the next 3 hours…introduced at internal temperature of 97.°C / 207°F

 

All tucked up tight and resting! The resting phase allows moisture to redistribute which results in a more tender, juicy final product.

 

At the one hour mark… 93°C / 201°F

 

Sturdy zips and fasteners reduce heat lose and keeps the environment for the brisket more stable. The less fluctuations the better!

 

Two hours in and can confirm the tray and steam is still hot as!…. 78°C / 173°F

 

Quality and simplicity. Velcro that is up for the job!!

 

Three hour mark and the brisket’s internal temperature is 72°C / 162°F! This is the sweet spot for me when it comes to serving temperatures for brisket, mutton and pulled pork. I dare say, if i had not been mucking around taking photos  the temperatures would have held for a few more hours easily. Either way a three hour rest is a good thing!

 

Hot out of The Meat Swadl! looks and smells on point!

 

The result after 3hours in The Meat Swadl is a ready to serve temperature, tasty, jiggly, tender, barked up piece of beef….stoked!
